Blueberry pecan cake donuts


1 cup almond flour
1/2 tsp baking powder
2 tbls swerve granular
1/2 tsp vanilla
2 eggs
2 tbls heavy cream
2 tbls butter (melted)
1/2 cup Blueberries
1/3 cup chopped pecans (optional)

Mix all ingredients well in medium size bowl.
Pour into silicone pan shaped for donuts . Bake for 20 Min.
When cooled sprinkle with swerve powdered sugar

Keto Cabbage enchilada Casserole





1/2 a head of cabbage (leaves washed and dried)
1 lb minced/ground beef or turkey
1 tbls paprika
3 tbls chili powder
1 tbls cumin powder
1 tsp garlic powder
1 tsp sea salt( or to taste)
1/2 tsp Black pepper (or to taste)
1/2 cup chopped onions
1/2 cup diced tomatoes
1 diced bell pepper
1 cup water
2 cups cheddar cheese shredded

Preheat oven to 350° Brown meat and drain ..Cook meat with 1/4 cup onion, diced bell pepper,tomatoes  , all spices ..and water , in a skillet for 20 min, stirring occasionally . 
  In a shallow baking dish ,
Place a ladle of meat mixture in baking dish layer with cabbage leaves and chopped onions , repeat and last layer should be beef and top with onions and cheese . Cover and Bake at 350° for 25 min

Low carb chocolate/ walnut cake

3 tbls almond flour
2 tbls cocoa powder unsweetened
1/2 tsp baking powder
2 tbls swerve
1 pk stevia(opt)
1 egg
1/2 tsp vanilla
2 tbls melted butter
1 tbls Walnuts
In a microwave safe mug

Mix all dry ingredients well
Stir in the remaining ingredients
Place in microwave for 90 sec
Remove and serve with whipped topping


Net carbs 3

( This cake I mixed 1 tbls cream cheese and 1/2 tbls of swerve.. and dropped it in the middle before cooking)

You can top with melted butter or whipped topping

Low Carb Carrot Cake




3 tbls almond flour
1/2 tsp baking powder
1 1/2 tbls swerve
2 packet stevia
1 1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/8 tsp ground ginger
2 tbls melted butter
1 tbls shredded carrots
1 tbls chopped walnuts
1 large egg
1 tsp vanilla
2 tbls heavy cream .

Mix dry ingredients in small microwave safe bowl or ramakin add all other ingredients ..mix well ..place in microwave for 70 seconds

Icing
2tbls cream cheese
1 tbl swerve
In a small bowl place in microwave for 15 seconds and stir
Makes 2 servings .. 5 net carbs per serving

Low Carb Keto style Dinner rolls




2 cups Almond Flour 
1/2 cup ground flaxseed
2 cups mozzarella cheese
2 tbls cream cheese
2 eggs 
1/2 tsp baking powder
Pinch of salt 


Preheat oven to 350 .. Mix Mozzarella Cheese and cream cheese ..place in microwave for 30 seconds then stir place again for 30 seconds . If it's to dry you can place back in microwave do soften for another 15 seconds. Stir and mix in all other ingredients.
Place parchment paper on cookie sheet . Form into roll size balls and shape to size . Bake at 350 for 20 min

Tuna Patty Melt Low Carb


2 tbls almond flour
1 tbs coconut flour
1/2 tsp baking powder
1/2 tsp onion flakes or chopped fresh onions or scallions
1/4 c finely chopped celery
1 egg
1 6-10oz  can of tuna
1/2 tsp paprika
1/2 tsp salt
3tbls shredded cheese


Mix all dry ingredients together then add egg  and tuna ..form into patties and fry in hot skillet with butter . Until golden brown on each side
Sprinkle shredded cheese on top and serve with mayo,ranch dressing,or mustard

Broccoli and beef casserole low carb

2lbs ground beef
1 tsp garlic powder
1 tsp paprika
1 tsp onion flakes
1 tbls Italian seasoning
1/4 tsp salt
1 14 oz can diced tomatoes (Italian flavor)
1 bunch Broccoli (usually two stalks ) chopped
2 cups mozzarella cheese
1/4 cup parmesan cheese

Preheat oven to 400° Brown beef and drain ..add all seasoning and tomatoes
While beef is Browning , boil or blanch broccoli in a sauce pan with water and a pinch of salt

Place Broccoli in a 9x8 casserole dish .. layer a handful of mozzarella cheese and sprinkle some parmesan cheese .. When beef is browned and drained pour over broccoli .. add remaining cheese or more if u like top with sprinkled parmesan cheese ..bake at 400 for 15-20 min

Cauliflower cheese fritter patties

1 cup grated or riced cauliflower
1/4 tsp salt
1 egg
1 tbls coconut or. Almond flour
1 tbls heavy whipping cream
1/4 cup shredded cheese
(Optional spices , onion flakes, garlic powder, pepper)

(Optional add cooked crumbled sausage to make a hearty all in one meal )

Grate cauliflower and set on paper towels
Sprinkle with salt


In a bowl mix remaining ingredients
Then fold over paper towels on cauliflower and squeeze out excess water.
Mix into bowl with ingredients.

Form into flat patties ..cook in oil of your choice for about 2-3 min on each side .. essential to use pressure on patties with flat spatula.. sprinkle with cheese or chives and serve  .. enjoy

Cauliflower Pizza Dough

Ingredients
  • 1 Lb frozen cauliflower florets, thawed
  • 2 large eggs
  • 1/2 cup(s) grated parmesan cheese
  • 1 cup(s) marinara sauce
  • 1/2 cup(s) shredded mozzarella
  • 1/2 cup(s) basil, chopped
  • (About 4 serving ..7 net carbs per serving)

Instructions

Preheat oven to 400ºF.

Place thawed cauliflower in a food processor and pulse until cauliflower is finely chopped.

Place in a microwave safe bowl and cook 5 minutes.

Remove cauliflower to a clean dish towel and press out all excess liquid.

Return cauliflower to the bowl and add eggs and cheese. Mix well.

On a parchment lined baking sheet or pizza pan, spread mixture out to resemble a pizza crust.

Bake 45 minutes. Remove from oven and top with marinara, mozzarella and basil. Return to oven until cheese is melted.

Coconut Flour Bread in a mug

                                                             
1 tbls coconut flour
1 tsp baking powder
1 tbls melted butter
1 egg
1 tbs sour cream
1 tbls mozzarella cheese
Pinch of salt









Mix dry ingredients well in a mug  then add wet ..mix well

Place in microwave for 90 seconds

Remove let cool a bit and slice ..this is great toasted in butter in a small pan medium heat





Try Swerve Sweetener in mix for a sweet taste

1 tbls water or cream
1 egg

Strawberry bread low carb

Strawberry bread

3 tbls almond flour
2 tsp strawberry jello
1/2 tbls chia seeds

2 tbls melted butter
2 tbls heavy cream
1/2 tsp orange extract
Pinch of salt
1 egg

Melt butter in mug
In a separate cup mix dry ingredients
Pour into, mug w/ melted butter
Then mix in wet ingredients

Cook in microwave for 90 seconds

Low Carb pizza

1 1/2 cups mozzarella cheese
2 Tbls cream cheese cut up into cubes
1 egg (beaten)
1/3 cup coconut flour


Preheat oven to 425,°  Mix the two cheeses in a medium bowl
Put in microwave for 45 seconds , stir and put back in microwave wave for another 45 seconds .

Mix egg and coconut flour in a small bowl
Incorporate into cheese mixture.

Knead into a dough , try to get it kneaded well the best you can softly kneading dough.

Place parchment paper on a cookie sheet and place dough ..spread it the best you can ..then place another sheet of parchment paper on top and roll out with rolling pin ..use a fork to poke holes in dough .. bake in oven for 6 min ,then poke holes with a fork again if you see bubbles ..bake for 6 more min .. take out and cover with desired pizza sauce and toppings place back in oven for 8-10 min till heated through

5 carbs , 3 fiber for dough

Peanut Butter cake in a mug

Peanut Butter Mug Cake


1 tbls almond flour
1/2 tsp baking powder
1 1/2 tbls swerve or sweetener of your  choice

Mix dry ingredients well in mug

Add
2 tbls Peanut Butter
1 egg
1/2 tsp vanilla
1 egg

Mix well until all blended
Microwave for 70 seconds

Serve with whipped cream and butter

Chocolate cake in a mug

Chocolate mug cake , scrumptious
2 tbls almond flour
2 tsp coconut flour
1/2 tsp baking powder
(Mix together dry ingredients well )

Mix 2tbls Cocoa powder
 1 1/2 tbls  swerve{ erythritol } or your choice low carb sweetener
Into
2 tbls melted butter

1 egg
1/2 tsp vanilla
1 tbls sour cream (optional)
1/4 cup chopped walnuts or pecans (optional)

Mix ingredients in order shown
Into a microwave oven safe  mug
Microwave for 60-90 seconds depending on ur oven
Serve with whipped heavy cream and berries (optional)




(As soon as you get it out of the oven make a well down the center and add some butter 😍it gets all melty and yummy)

Almond Flour Low Carb Cheddar Cheese Biscuits





Cheddar Cheese Biscuits
2 c Almond flour
1/2 tsp baking powder
1/4 tsp salt 
2 eggs lightly beaten
1/4 c melted butter
1 c cheddar cheese shredded
Mix dry dry ingredients well 
slowly add  the  wet ingredients (melted butter and beaten eggs)  and  fold in cheese ..

drop 8 big balls by large Spoon ( should be the size of a golf ball)  on cookie sheet bake at 350° for 18 min

Chicken cauliflower soup

4-6 pieces of chicken
1-2 cups cauliflower
1 tsp salt
1/2 tsp pepper
1 cup chicken broth
1 cup water
1/3 tsp garlic powder
1/2 tsp ground cumin
1/3 bunch chopped cilantro
1/4 cup chopped green chilies
4 oz green enchilada sauce

1/2 cup sour cream
1/2 cup white melting cheese

Place all ingriedients in (except for sour cream and melting cheese )pressure cooker instant pot ...cook 30 min pressure .. Use normsl pressure release . remove chicken and de bone and chop , add chicken back and mix in sour cream and melting cheese stir and serve , garnish with cilantro

Low Carb Pancakes

2 tbls Almond Flour
1 tbls coconut flour (optional or do 3 tbls of almond flour)
1 1/2 tsp flaxseed meal (flaxseed optional)
1/2 tsp baking powder
2 tsp Swerve or Stevia(optional)
Pinch of salt
1 egg
2 tbs heavy cream
1 tbls oil (your choice)
Add water if not runny


Mix all dry ingredients then add the other wet ingredients ..mix up and get a runny pancake batter type consistency . Heat pan with Butter or Coconut or Olive oil then pour and cook about a min on one side turn and cook the same ..Pat with spatula to make sure it's cooked solid and serve with sugar free syrup .. enjoy

Low Carb french toast

Low Carb French Toast

1 tbls Coconut Flour
3 tbls Almond Flour
1/2 tsp baking powder
1/2 tsp cinnamon
Pinch of stevia for baking
Pinch of salt
Mix all dry ingredients on a mug
Add:
1 egg
1 tsp coconut oil/ or butter or any oil
1/2 tsp vanilla

Mix well ..cook in microwave for 90 min

Take out our of mug, and slice desired thickness (thin is best)
Heat coconut oil or butter
In a sauce pan, beat one egg in a flat bowl or plate ..dip bread slices in the egg and then cook till lightly browned on both sides .
Serve with butter and sugar free syrup

Low Carb Breakfast sandwich

2 slices 90 second Bread

For bread
In a mug mix
3 tbls almond flour
1/2 tsp baking powder
Mix well
Add
1 tbs oil
1 egg
1/8 cup mozzarella cheese

Cook in microwave for 90 seconds
Slice bread into about 4 slices
Cook egg and ham (Nat cured no sugar) to your desired taste w/seasoning

And assemble

May add a low carb condiment for added

flavor

Note:
You can use 2 tbls almond flour and 1 tbs coconut flour if desired


Low Carb Almond flour / walnut Cookies


1/2 cup (softened) butter or substitute u wish
1 and 3/4  cups Almond flour
1/4 cup coconut flour
1 tsp baking powder
1 tsp vanilla
1/4 tsp salt ( omit if you use salted butter)
1/4 cup stevia for baking
1 egg (optional)
2 tbls chopped walnuts

Pre heat oven to 300° Mix softened butter in mixer for 60 seconds , add remaining  ingredients ,until dough forms. Take by teaspoonfuls shape into balls and place on cookie sheet . Bake for 5 minutes . Then press down with fork , bake another 15 min they will not brown. Let cool for 5 min and serve.

Notes:
.
** these cookies are lightly sweetened, if you want a sweeter cookie ,you may add up to a half a cup of baking Stevia or Splenda.

** You can omit coconut flour and make up the difference with Almond flour , it will make for a sandier soft cookie , I like them both ways , the coconut flour gives it a more dense hold.

** Omitting the egg makes a softer easier to fall apart cookie (my test omitted egg and coconut flour , result was sandier cookie )

**Other add ins : chopped peanuts , chopped pecans, sugar free chocolate chips
