7 layer Taco dip

1 can refried beans mixed with 1 pkg. taco seasoning
3 avocados mixed with 2 tablespoons of lemon juice , 1/2 tsp salt and 1/4 tsp. pepper
8 ounce sour cream mixed with 1/2 cup mayonnaise , 1 package taco seasoning 
2 cans of sliced black olives
1/2 cup diced onions
3 medium tomatoes diced combined with 1 cup shredded lettuce 
1/2 lb. shredded cheese


All ingredients layered in round 2 qt. clear glass bowl 
serve with chips

Broccoli Crock Pot Dip

1 lb. ground beef , browned and drained
1 can of cream of mushroom soup
1 pound American Cheese
2 cups frozen broccoli
2 tablespoons green salsa jalapeno sauce


Combine all ingredients . Cook on low for 3 hours. Stir occasionally

Hackbarth Award winning Chili

2 lb Ground Sirloin or beef for chili
1/2  Large Onion  (chopped)
2     Garlic cloves (chopped)
2 c.  Water
1 c..  Tomato Sauce
1 1/2 tsp. Paprika
2 tsp. Cumin Powder
2 tsp. Oregano
3/4 c. Chili Powder
1 8oz can Chopped Tomatoes
1/2 tsp Salt
1 16 oz can Hominy (do not drain)
1  16 oz can  Kidney Beans (do not drain)
1/2  Bunch of Cilantro (chopped)
1 tsp. Red Cayenne Pepper (optional)
2 tsp. Masa


Brown meat  in a large pot  then drain. Add garlic and onion stir cook for about 5 min. Add water and tomatoes. stir in paprika, cumin, oregano chili powder , tomatoes and salt.  Stir in and cover for 30 minutes. Add hominy, beans ,chopped cilantro and red pepper. Mix the masa with a small amount of water to a flowable mixture stir into the pot and simmer for 45 min. to 1 hour. depending on thickness you may want to simmer it down then  serve.

Shipwreck Dinner

1 1/2 pounds browned and drained ground sirloin
1-16 ounce can pork and beans
1 large onion, sliced thin
4 potatoes, sliced thin
1 can of tomato soup  dilute with 1 can of water




Place potatoes in bottom of casserole, layer onions, beans and cooked meat. Pour diluted soup over top and DO NOT  MIX ,. cover and bake at 350 degrees for 1 hour or until potatoes are done. 

Taco Casserole

1 lb. hamburger meat
1 c. sour cream
2/3 c. mayonnaise
1 cup salsa (medium or hot)
1c. shredded cheddar cheese
2 cups bisquick
1/2 c. cold water
2-3 tomatoes , sliced
2/3 cup chopped green hot peppers


Grease 9x13 dish . Cook and stir hamburger. Drain. Mix sour cream, mayonnaise and cheese; set aside. Mix Bisquick and cold water until soft dough forms . Pat into pan , pressing dough 1/2 inch up sides. Layer beef, salsa, tomatoes and green pepper in pan. Spoon sour cream mixture over the top . Bake at 375 degrees for 25-30 minutes. serves 8

Easy Homemade Biscuits

1 cup of flour
1 1/2 tsp. baking powder
1/2 tsp . salt
3 tablespoons shortening
1/3 cup milk

Heat oven to 450. Mix dry ingredients in bowl. Cut in shortening. Mixture will have lumps the size of small peas. Stir in milk. Round up on lightly floured surface, knead 20-25 times, roll to 1/2 inch thickness. Cut with floured biscuit cutter. Place on ungreased baking sheet. Bake 10-12 minutes.

Cabbage Soup

1 large head of cabbage
2 1/2 pounds smoked sausage
1 medium onion , diced 
3-4 potaoes
6-8 whole allspice
1 quart tomato juice
1 green pepper or 1 hot pepper
1 small can stewed tomatoes
1 bay leaf 
salt and pepper to taste


Cut cabbage and potatoes in bite sized pieces. Cut sausage in 1/2 inch slices. 
Dice onion and pepper. Place all in large pot. Cook slowly , keep covered , until vegetables are tender or about 1 hour

Potato Bacon Chowder

8 slices of bacon, cut up
1 cup chopped onion
2 cups cubed fresh potatoes 
1 cup water
1 can cream of mushroom soup
1 cup sour cream
1 3/4 cups milk
1/2 tsp. salt
dash of pepper
1 tsp. Parsley 


Fry bacon until crisp in a 3 quart saucepan. Add onion and saute 2-3 minutes. Pour off fat. Add potatoes and water. Bring to a boil, cover and simmer 10-15 min. or until potatoes are tender. Stir in soup and sour cream , gradually add milk . Add salt and pepper and parsley. Heat to serving temperature. Do not boil . yields 7 cups of soup. 

Cauliflower Soup

1 medium head cauliflower
1 medium onion, chopped
2 tbls. olive oil
3 tbls. rice (not instant)
1 pkg. lipton chicken noodle soup mix
1 egg
3-4 tbls. sour cream


Cut up Cauliflower, cook in water (cover cauliflower). Add chopped onion, oil , rice and soup mix. Cook until cauliflower and rice are tender. Beat egg and add to soup. Add sour cream . Serves 6

Easy Cheese Broccoli Soup

6 slices easy melt cheese , or 2 cups of shredded easy melt cheese your choice
1 can condensed Cheddar cheese soup 
1 soup can of milk
1 package (10 oz.) frozen chopped broccoli , thawed and drained (if you use fresh you will need to chop and     steam it first )


1/2 teaspoon pepper
1 teaspoon fresh squeezed lemon juice or you can use the bottled type
4 drops of hot sauce
1/2 cup shredded cheese for sprinkling

Tear cheese in pieces ; place in pan with soup and milk ; cook on low until cheese is melted and blended into soup . Add other ingredients, cook on medium heat stirring constantly until broccoli is tender. serve in bread bowl or bowl and sprinkle with cheese serves 4
