Low Carb Almond flour / walnut Cookies


1/2 cup (softened) butter or substitute u wish
1 and 3/4  cups Almond flour
1/4 cup coconut flour
1 tsp baking powder
1 tsp vanilla
1/4 tsp salt ( omit if you use salted butter)
1/4 cup stevia for baking
1 egg (optional)
2 tbls chopped walnuts

Pre heat oven to 300° Mix softened butter in mixer for 60 seconds , add remaining  ingredients ,until dough forms. Take by teaspoonfuls shape into balls and place on cookie sheet . Bake for 5 minutes . Then press down with fork , bake another 15 min they will not brown. Let cool for 5 min and serve.

Notes:

** these cookies are lightly sweetened, if you want a sweeter cookie ,you may add up to a half a cup of baking Stevia or Splenda.

** You can omit coconut flour and make up the difference with Almond flour , it will make for a sandier soft cookie , I like them both ways , the coconut flour gives it a more dense hold.

** Omitting the egg makes a softer easier to fall apart cookie (my test omitted egg and coconut flour , result was sandier cookie )

**Other add ins : chopped peanuts , chopped pecans, sugar free chocolate chips
