Chicken cauliflower soup

4-6 pieces of chicken
1-2 cups cauliflower
1 tsp salt
1/2 tsp pepper
1 cup chicken broth
1 cup water
1/3 tsp garlic powder
1/2 tsp ground cumin
1/3 bunch chopped cilantro
1/4 cup chopped green chilies
4 oz green enchilada sauce

1/2 cup sour cream
1/2 cup white melting cheese

Place all ingriedients in (except for sour cream and melting cheese )pressure cooker instant pot ...cook 30 min pressure .. Use normsl pressure release . remove chicken and de bone and chop , add chicken back and mix in sour cream and melting cheese stir and serve , garnish with cilantro

Low Carb Pancakes

2 tbls Almond Flour
1 tbls coconut flour (optional or do 3 tbls of almond flour)
1 1/2 tsp flaxseed meal (flaxseed optional)
1/2 tsp baking powder
2 tsp Swerve or Stevia(optional)
Pinch of salt
1 egg
2 tbs heavy cream
1 tbls oil (your choice)
Add water if not runny


Mix all dry ingredients then add the other wet ingredients ..mix up and get a runny pancake batter type consistency . Heat pan with Butter or Coconut or Olive oil then pour and cook about a min on one side turn and cook the same ..Pat with spatula to make sure it's cooked solid and serve with sugar free syrup .. enjoy

Low Carb french toast

Low Carb French Toast

1 tbls Coconut Flour
3 tbls Almond Flour
1/2 tsp baking powder
1/2 tsp cinnamon
Pinch of stevia for baking
Pinch of salt
Mix all dry ingredients on a mug
Add:
1 egg
1 tsp coconut oil/ or butter or any oil
1/2 tsp vanilla

Mix well ..cook in microwave for 90 min

Take out our of mug, and slice desired thickness (thin is best)
Heat coconut oil or butter
In a sauce pan, beat one egg in a flat bowl or plate ..dip bread slices in the egg and then cook till lightly browned on both sides .
Serve with butter and sugar free syrup

Low Carb Breakfast sandwich

2 slices 90 second Bread

For bread
In a mug mix
3 tbls almond flour
1/2 tsp baking powder
Mix well
Add
1 tbs oil
1 egg
1/8 cup mozzarella cheese

Cook in microwave for 90 seconds
Slice bread into about 4 slices
Cook egg and ham (Nat cured no sugar) to your desired taste w/seasoning

And assemble

May add a low carb condiment for added

flavor

Note:
You can use 2 tbls almond flour and 1 tbs coconut flour if desired


Low Carb Almond flour / walnut Cookies


1/2 cup (softened) butter or substitute u wish
1 and 3/4  cups Almond flour
1/4 cup coconut flour
1 tsp baking powder
1 tsp vanilla
1/4 tsp salt ( omit if you use salted butter)
1/4 cup stevia for baking
1 egg (optional)
2 tbls chopped walnuts

Pre heat oven to 300° Mix softened butter in mixer for 60 seconds , add remaining  ingredients ,until dough forms. Take by teaspoonfuls shape into balls and place on cookie sheet . Bake for 5 minutes . Then press down with fork , bake another 15 min they will not brown. Let cool for 5 min and serve.

Notes:
.
** these cookies are lightly sweetened, if you want a sweeter cookie ,you may add up to a half a cup of baking Stevia or Splenda.

** You can omit coconut flour and make up the difference with Almond flour , it will make for a sandier soft cookie , I like them both ways , the coconut flour gives it a more dense hold.

** Omitting the egg makes a softer easier to fall apart cookie (my test omitted egg and coconut flour , result was sandier cookie )

**Other add ins : chopped peanuts , chopped pecans, sugar free chocolate chips
