Green Enchilada Chicken

1lb chicken tenders or breast  boneless
1     8oz . can of green enchilada sauce
1     4 oz sm. can of diced green chilies
8 oz of sour cream 
In a pan saute chicken till cooked add the green enchilada sauce and diced green chilies simmer for 15 minutes.
Add the sour cream  stir in till smooth and comes to a slight boil. Serve with rice ,chips, warm corn tortillas  and beans it is so easy and so yummy. Do not over cook after you add the sour cream

Ingredients:
       
  2 Cans Black Eye Peas: Drained, not rinsed 
 1  8-11 oz can of yellow corn
 1 cup Roasted  Red Pepper or Sundried Tomato dressing
 1 jar of roasted peppers (chopped) 
 1 Container  De Gallo (Produce Section)
 4 0z crumbled feta cheese or queso fresco
 1/8 cup chopped Cilantro 
Directions:


1.     Drain Peas, do not rinse.
2.     Mix together all ingredients..


refrigerate and serve chilled with chips or crackers

I am trying my hand at making an easy empanada

Chocolate Caramel Nut Bars ( soooo yummy)

1- 14 oz bag of Kraft caramels
1-5 1/3 ounce can of evaporated milk
1 box of German chocolate cake mix w/pudding
1/2 cup melted margarine or butter
1 1/2 cups chopped walnuts
1-6 ounce package of chocolate chips


Melt caramels with 1/3 cup of evaporated milk over low heat. Stir until smooth.
Combine remaining milk, cake mix and margarine; mix well. Grease 9x13 inch pan. Press half cake mixture in pan.
Bake at 350 degrees for 6 min. Add 1 cup of walnuts and chocolate chips over crust.
Top with caramel (spread to edges of pan. Top with remaining cake mixture; press gently into caramel . Sprinkle the rest of the walnuts on top. Bake at 350 degrees for 20 minutes. Chill. Makes 24 bars

Easy Buenuelos For New Years


1 pkg of flour tortillas ( I buy the Guerrero brand that looks like it is not cooked )
  one package I have bought before has " listas para el comal" on the front cover of pkg.
1/2 cup oil
1cup sugar
1/8 cup cinnamon (you can use less Cinnamon if you like)
1/8 cup powdered sugar (for sprinkling )


Heat oil in small pan until hot and ready for frying ,Mix sugar and 1/2 the cinnamon in a round deep plate ,  place each tortilla in hot oil  one at a time turning once until golden fried on both sides, place on draining dish, put fried tortilla in sugar dish  cover with sugar mixture until well coated continued for all tortillas , sprinkle tortillas with powdered sugar and cinnamon

note you may need to replenish oil depending on how many you make.

Festive Holiday Punch

2 quarts fruit sherbet (strawberry-lemon,orange ,lime or mango)
2 64 oz bottles of fruit punch
1 2liter bottle lemon lime soft drink or ginger ale


Scoop sherbet into a punch bowl using an ice cream scoop. Pour in  the fruit punch and lemon lime soft drink. 
Serves 8-10

Ooey Gooey Chocolate Cake

 Cake 
1 (18.25-ounce) box chocolate  cake mix 
1 egg 
1/2 cup (1 stick) butter, melted 

Filling : 
1 (8-ounce) package cream cheese, softened 
2 eggs 

1c. chocolate chips 
1 (16-ounce) box confectioners' sugar 
1/2 cup (1 stick) butter, melted

1/2 cup chopped pecans 

Preheat oven to 350 degrees. Lightly grease a 13x9x2-inch baking pan. In the bowl of an electric mixer, combine cake mix, egg, and butter and mix well. Pat into the bottom of prepared pan and set aside. top the cake mixture with the chocolate chips, Still using an electric mixer, beat cream cheese until smooth; add eggs  and nuts , Dump in confectioners' sugar and beat well. Reduce speed of mixer and slowly pour in butter. Mix well. 

Pour filling onto cake mixture and spread evenly. Bake for 40 to 50 minutes. Don't be afraid to make a judgment call on the cooking time, because oven temperatures can vary. You want the center to be a little gooey, so don't bake it past that point 

Gooey Butter Cake


1 package pound cake mix
1/2 cup butter, melted
1- 8 ounce package of cream cheese
2 eggs
1 pound box powdered sugar

Mix cake mix, eggs and butter. Beat for 2 minutes until thick. Spread in a lightly greased 9x13 inch pan . Mix eggs., cream cheese and powdered sugar together. Beat for 2 minutes. place on  top of batter in pan Bake at 350 for 40 - 60 minutes , or until golden brown. Cool for 20 minute and top with powdered sugar.
you can make this with chocolate cake mix also.

Festive Fruit Cake (NO Bake Easy to put together)

2/3 cup evaporated milk
2 cups miniature marshmallows
6 tbls. undiluted frozen orange juice
3/4 c. dates, cut in small pieces
3/4 c. white raisins or regular
1 c. broken walnuts pieces
1 c. mixed candied fruit
1/4 c. candied cherries
1 box (4cups) fine graham cracker crumbs
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. cloves

In a 3-quart saucepan combine milk , undiluted frozen orange juice and marshmallows.
Stir over medium heat until marshmallows melt. Remove from heat. Stir in dates, raisins,nuts,candied fruit,and candied cherries. In a separate bowl , mix graham cracker crumbs,cinnamon , nutmeg and cloves together.
Mix well, Add crumb mixture to fruit mixture mixing with your hands if necessary ,
This is very thick to work with ) Press mixture firmly into a 5-6 cup ring mold or loaf pan lined with waxed paper. cover lightly Chill for at least a day or two

Homemade easy Wacky Cake

1/4 c. oil
3 cups flour
1 tbls . salt
2 tsp. baking soda
2 cups sugar
6 tbls. vinegar
2 c. cold water
2 tsp. vanilla

pour oil in 9x13 pan and cover bottom of pan with oil, mix dry ingredients in a mixing bowl and pour into pan when well mixed add remaining ingredients mixing  well bake at 350 for 30-45 min

WACKY CAKE



1 1/2 cups all purpose flour
1 cup sugar
1/4 cup cocoa
1/2 teaspoon salt
1 tsp. baking soda
1 teaspoon vanilla
1 tablespoon white vinegar
1/3 cup vegetable, peanut or light olive oil
1 cup cold water, milk or chocolate milk

Preheat oven to 350°F.This cake is so easy and fun to make that you'll be tempted to save on dishes by preparing it in a disposable 8 or 9 inch square pan.
There are no mixing bowls to worry about, since the cake is mixed directly in the pan so that you can make it more often.
Grease the pan well with Crisco or vegetable shortening.
Measure the flour, sugar, cocoa and salt and baking soda into the pan. Using a fork or whisk, stir all ingredients until no streaks remain and everything is well combined.
Scoop out three holes or valleys in the flour mixture. Pour the vinegar into the first hole; the vanilla into the second hole, and the oil into the third. You can also add a few drops of rum if u like.
Pour the water or milk over everything and stir with a fork or whisk until everything is well blended. Don't forget the corners of the pan and the edges!
Bake 35-40 minutes. Cool 5 minutes and cut into squares. Serve while still warm with ice cream or Cool Whip.

Candy Cane Cookies

Candy cane cookies are made with food coloring, vanilla, butter, and pepermint extract.
Cook Time: 10 minutes


Total Time: 10 minutes


Ingredients:


3 1/2 cups all-purpose flour
1 1/4 cups (10 ounces) butter, softened
1 cup confectioners' sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
1 egg
1/2 teaspoon red food coloring or enough for desired color
1/4 teaspoon peppermint extract
Preparation:


Into a mixing bowl, measure flour, butter, confectioners' sugar, vanilla, salt, and egg. Beat with hand-held electric mixer at low speed until mixture is well blended, scraping bowl a few times.
Set aside half of the cookie dough. Into remaining dough in bowl, knead in red food coloring and peppermint extract until well blended.


Preheat oven to 375°. On a lightly floured surface, using hands, take 1 teaspoonful of plain dough and roll into a 4-inch rope. Repeat, using tinted dough. Place the ropes side-by-side and gently twist together. Pinch ends lightly to seal. Curve one end to form candy cane. Move cookie to ungreased baking sheets with a spatula. Repeat with remaining dough.


Bake cookies at 375° for 10 minutes, or until lightly browned around edges. Remove to racks with a spatula; let cool. Store in tightly covered container for up to 1 week. Makes about 4 dozen candy cane cookies.

How to make it

  • Beat margarine and peanut butter at medium speed with an electric mixer; gradually add sugars, beat well add egg and beat till creamy. Combine flour and soda, gradually add to creamed mixture, mixing well. Cover and chill at least 2 hours. Shape dough into 1 inch balls; taper one end of each ball to form a tear-drop shape. Press one side flat. Place flat sides on ungreased cookie sheets with cookies 2 inches apart. Press in sides of dough to raise backs of mice. Gently place 2 peanut halves in dough for ears. With wooden toothpick, make 1/2 inch deep hole at tail end. Bake at 350 degrees for 9 minutes, remove cookies from oven. Place cinnamon candies for eyes and bake an additional 1-2 minutes or until brown. Remove from oven, insert licorice tails and cool completely on baking sheets.

Peppermint Bark Candy

White Bark Candy



1lb  White Chocolate
8 to 12 peppermint sticks crushed into pieces

1tsp peppermint extract 


Melt Chocolate in double boiler. Stir in peppermint extract and  crushed peppermint sticks. Spread thinly on greased cookie sheet. refrigerate for about an hour. Break into pieces when firm and store in covered containers.

1 cup of peanuts

Easy Pecan Pie

1 3 1/4 ounce package of vanilla instant pudding
1 cup corn syrup
3/4 cup evaporated milk
1 egg
1 cup chopped pecans
1 unbaked 8 inch pie shell


Preheat oven to 375 degrees. Blend pudding mix with syrup . Slowly add evaporated milk
and egg ; stirring to blend. add pecans . Pour into pie shell.  Bake at 375 @ for 45 minutes, or until top is firm and just begins to crack. cool for 3 hours

Easy Chocolaty Cake

1 box  of chocolate cake mix
1 box of chocolate instant pudding
1/4 cup oil
2 eggs
1 1/4 cup water
1 cup of chocolate chips

Pour oil into 13 x9 inch pan . coat bottom of pan. add remaining ingredients and stir with a fork until well blended. spread evenly in pan. Bake at 350 @ for 35 to 45 min.

Cranberry Cheese Nut Bread

2 1/2 cups all purpose flour
1/2 cup sugar
1/2 cup brown sugar
3 1/2 tsp baking powder
1 1/4 cups milk 
1 egg
1 tbls. plus 1 tsp. grated orange peel 
1 cup chopped nuts (I use walnuts ) 
1 1/2 cups shredded cheddar cheese
1 cup cranberries


Heat oven to 350 @  . Grease bottom of loaf pan only 9x5x3 inches or 2 8 1/2 x 4 1/2 x 2 1/2 inches. 


Mix all ingredients , beat 30 seconds pour into pan (s) . Bake until wooden pick inserted in center comes out clean , 9 in. loaf 55 to 65 min. , 8 inch loaves 55 to 60 minutes ,let cool slightly ,  Loosen sides of loaf pan , remove from pan . Cool completely before slicing . 


You can use Walnuts, Pecans, or both
