Chicken Pozole

Chicken Pozole
2-3 cups diced Chicken (2 breasts)
Sauté chicken in pot in a little olive oil and shred or dice
3 cups water
8oz diced tomatoes
2 tbls paprika
3 tbls chili powder
1 14oz can hominy (frained)
1 chili ancho washed seeds out (boiled puréed in blender )
2 cups chicken broth
2 tsp oregano
2 tsp cumin
1 garlic clove
1 tsp sea salt
1/2 tsp black pepper
1/4 cup chopped onion

All-Clad Stainless Steel Stockpot, 8 qt. (Google Affiliate Ad)
Add all ingredients in stock pot that you cooked the chicken. In
Heat to a simmer
Simmer for about 1 hour
Serve with fresh  lime,chopped onions,chopped fresh pepper,chopped cilantro and warm corn tortillas




I absolutely love this Paula Dean stock pot . I bought one for me and one for my daughter
